Broiled Jumbo Shrimp with Malabar Masala

If you think garlic and butter are a match made in heaven for shrimp, think again! As you can imagine the Malabar Masala is literally designed to fit all your seafood seasoning needs, From grilled fish, skewered shrimp and also hearty vegetables, so don’t be shy with this seasoning. Moist, juicy and delicious shrimp that takes only 10 mins to make its the perfect weeknight dinner.

Ingredients

1 lb Jumbo shrimp (I use 16/20)

2 Tbs Malabar masala-divided 

2 Tablespoons minced garlic

2 tsp salt

1⁄2 tsp turmeric

1 sprig curry leaves chopped up

3 Tbs lime juice - divided

1⁄3 cup ghee or clarified butter

Preparation

  1. Turn your oven on to Broil (500F
  2. While the oven is heating up mix the shrimp, 1 Tbs malabar masala, garlic, salt, turmeric, curry leaves, and half the lime juice together until all the shrimp is evenly coated.
  3. Lay the shrimp out in an even, single layer in a baking dish
  4. Pour all the ghee/butter over the shrimp and broil on one side for 2 minutes. Very carefully turn the shrimp and broil for an additional 2 minutes .
  5. Using an oven mitt or a dry kitchen towel remove the shrimp from the oven, turn the oven off. Sprinkle the remaining masala and the lime juice and serve immediately with crusty bread to sop up the butter with.
