Butternut Squash and Apple Galette

When the Spicewalla crew throws a potluck, things get competitive. But this Butternut Squash & Apple Galette from our very own Nadine McCowan stole the show!

Sweet roasted squash, tart apple slices, caramelized onion, and a kiss of blue cheese all tucked into golden, flaky pastry—this galette is autumn wrapped up in buttery perfection.

A hit at our table, and guaranteed to be one at yours! 

  • Ingredients

    1 Pie Crust (can be store-bought & rolled out, or your own recipe)
    1 large red apple, cored and sliced
    1 butternut squash, peeled, halved and seeded
    1 sweet onion
    3 Tbsp melted butter
    2 Tbsp Spicewalla Amore Italian Seasoning
    Spicewalla Sicilian Sea Salt
    Spicewalla Table Ground Black Pepper
    2 Tbsp whole grain mustard (Lusty Monk preferably)
    1/3 cup Stilton blue cheese

    Preparation

    1. Preheat oven to 400 degrees farenheit. 
    2. Core the apple and slice into 16 pieces. 
    3. Slice 16 1/8 inch pieces of squash. 
    4. Slice onion into thin wedges. 
    5. Put all veggies in a bowl and toss with melted butter, Amore Italian Seasoning, Salt & Pepper. 
    6. Cover a cookie sheet with parchment paper. 
    7. Roll out pie crust & spread mustard over crust. 
    8. Starting 2 inches from the edge, alternate veggies in a circular pattern on the pie crust until you come back to the middle.  Fold & pleat the edges of the crust up around the veggies. 
    9. Bake until brown and squash is tender - about 55 minutes.  Take it out of the oven, top with cheese and bake for 5 more minutes. 
    10. Cool for 5 minutes before cutting.
