Honey & Herb Breakfast Potatoes

Is there anything more comforting and satisfying than perfectly crispy breakfast potatoes? Nope! Of course that's a trick question. Our sweet & zesty Honey & Herb Rub pairs perfectly with these soft-on-the-inside spuds and roasted red peps for a fresh yet familiar flavour. Perfect as everyone's favorite brunch side, or does double duty as a supporting character to grilled steak or chicken. No matter which meal you stick 'em into, just prepare to enter pure potato paradise.

  • Ingredients

    5-6 medium sized Yukon gold potatoes, cut into 1/2 inch cubes
    1 red bell pepper, diced
    1/2 sweet yellow onion, diced
    Extra virgin olive oil
    Kosher salt, to taste
    Spicewalla Black Pepper, table grind, to taste
    1.5 Tbsp Spicewalla Honey & Herb Rub

    Preparation

    1. Preheat the oven to 425°F
    2. Place the potatoes, red bell peppers, and onions on a large rimmed baking sheet. 
    3. Drizzle with oil and season with salt, pepper, and Honey & Herb Rub, toss with your hands to make sure everything is evenly coated
    4. Bake for 20-25 minutes, stirring halfway through until the potatoes are easily pierced with a fork. 
    5. Season with salt, pepper and Honey & Herb Rub again before serving. 
    6. Enjoy!
