New Years Day Hoppin' John

Hoppin' John is a comforting Southern recipe that is traditionally served on New Years Day to bring good luck and good fortune into the new year. This super cozy bowl of flavour features black eyed peas and Carolina Gold rice from our buddies at Marsh Hen Mill in Edisto Island, SC. Ingredients

1 1/2 cups Marsh Hen Mill Black Eyed Peas

1 pound thick-cut bacon, diced

4 stalks of celery, diced

1 small yellow onion, diced

1 green bell pepper, diced

1 carrot, peeled and diced

2 garlic cloves, minced

1 Tbs N'Asheville Hot Chicken Seasoning

64 oz (8 cups) chicken broth

Kosher salt and pepper to taste

15 oz can diced fire roasted tomatoes

2 cups Marsh Hen Mill Carolina Gold Rice

Green onions, thinly sliced, for serving

Preparation

  1. Place the black eyed peas in a large bowl, cover with water and soak for 2 hours or up to 24 hours, then drain and set aside.
  2. In a large pot or dutch oven add the diced bacon over medium- high heat and cook until crispy, about 6 minutes. Remove the bacon and set aside. 
  3. Drain some of the bacon grease from the pot, leaving about 3 Tablespoons
  4. Add the celery, onion, bell pepper, carrot, garlic and N'Asheille Hot Chicken Seasoning. Saute, stirring often until the vegetables are soft, about 8 minutes.
  5. Add the chicken broth, drained black eyed peas, bacon, salt, pepper, and diced tomatoes.
  6. Bring to a boil, reduce the heat to medium low, cover and simmer for about 45 minutes or until the beans are soft. 
  7. Add the Carolina Gold rice and continue to simmer, covered, about 20 minutes or until the rice is cooked. 
  8. Garnish with sliced green onions and enjoy!
