Quick Carne Asada Tomatillo Salsa

If you're constantly on the hunt for the perfect salsa verde, look no further. Fresh tomatillos, onion, cilantro, and our spicy Carne Asada Rub come together quickly and easily. Normally, we'd also need citrus juice, a jalapeño pepper, and a dash or two of white vinegar, but this versatile blend replaces them all. Get the tortilla chips (or tacos) ready, folks. It's dippin' time!

Ingredients

3-4 tomatillos
1 small white onion
1 tbsp high heat cooking oil
1 tbsp Spicewalla Carne Asada Rub
½ cup water or stock
Salt to taste
â…“ cup chopped cilantro

Preparation

  1. Peel the papery outer covering from the tomatillos and rinse thoroughly under warm water
  2. Chop onion into chunks small enough to fit in a blender
  3. Drizzle oil into very hot pan and sear the onion and tomatillo until they’re nicely charred on all the sides (about 10 minutes), adding the Carne Asada Rub about halfway through, then deglazing the pan with ¼ cup water
  4. Let the blistered veggies cool completely, then add them to the blender or food processor with remaining water
  5. Blend until the salsa reaches your desired consistency, then taste test to check if it needs salt or more Carne Asada Rub
  6. Add freshly chopped cilantro and stir
  7. Enjoy!
