Matt Morse's Spicewalla Lavender Lemon Drop

Matt Morse's legendary lemon drop isn't the overly sweet cocktail thats served in a lot of places, it's a perfect combination of tart, sweet and floral flavours guaranteed to please most palates. While we recommend the optional egg white since it brings a whole new creamy depth to this already popular classic cocktail, but we understand if you don't want to consume a raw egg white.

  • Ingredients

    1 1/2oz gin (We used beefeaters) 

    1/2oz cointreau 

    3/4oz lemon 

    3/4oz spice walla lavender lemon sugar cordial 

    1 egg white (optional)

    Preparation

    Make cordial with lemon juice and spicewalla lavender lemon sugar 

    1. 50 g lavender lemon sugar 
    2. 50 g lemon juice 
    3. 50 g water 
    4. Combine all ingredients in a pot heat on medium until combined 
    5. Strain through a fine mesh strainer into a container

    Assemble Cocktail

    1. Rim a martini glass with spicewalla lavender lemon sugar 
    2. Add all ingredients to a shaker tin and dry shake 
    3. Add ice and shake some more 
    4. Strain ice out and dry shake again 
    5. Strain into a martini glass do some cool bitters art!

Spice Walla Lavender Lemon Drop
