Piri Piri Salmon with Everything Bagel Broccolini

This easy and scrumptious sheet pan supper comes right from the Spicewalla dinnertime dynamo himself, Meherwan Irani. This dish couldn’t be simpler or more packed with fresh, vibrant flavour. Our Everything Bagel Seasoning compliments crispy broccolini with a toothsome nuttiness. Meanwhile, our quick Piri Piri marinade and crushed Pink Peppercorn elevate tender, oven-broiled salmon. Yum.

Ingredients

For the broccolini:
1 bunch of broccolini
2 Tbsp olive oil
1 Tbsp aged Balsamic vinegar (regular balsamic is fine too)
 Salt and pepper to taste
2 Tbsp Spicewalla Everything Bagel Seasoning


For the salmon:
2 fillets of salmon, skin on 
3 Tbsp soy sauce
3 Tbsp maple syrup (or honey)
2 heaping tsp Spicewalla Piri Piri
1 heaping tsp fresh grated ginger
1 tsp of crushed Spicewalla Pink Peppercorn (optional, but delicious)

Preparation

For the broccolini:

  1. Preheat the oven to 450°F
  2. Lay out broccolini on a tray lined with parchment paper
  3. Drizzle olive oil, balsamic and some salt and pepper over the top
  4. Mix with tongs or your hands to ensure everything is coated well.
  5. Add Spicewalla Everything Bagel Seasoning.
  6. Arrange broccolini in an even layer on the pan.
  7. Bake for approximately 30 mins, or to your desired liking (we like the ends extra crispy!)
  8. Once you’ve reached the desired roast, mix again on the pan to sop up the oil and vinegar on the parchment paper. Serve warm!

For the salmon:

  1. Preheat the oven to 450°F
  2. Place the salmon on a plate or in a shallow dish. Lightly salt and pepper the salmon. 
  3. Whisk together soy sauce, honey/maple syrup, Piri Piri, and ginger. Put marinade aside.
  4. Turn salmon over and pat skin completely dry. Lightly oil and heavily salt the skin side of the salmon (this prevents the salmon from sticking to the pan or grill).
  5. Brush or pour marinade on top of salmon filets. (optional: allow to rest for 20-30 mins)
  6. Oil a parchment lined baking sheet, and place salmon on top, skin side down. Be careful not to drip any of the marinade onto the pan.
  7. Bake for about 20 minutes or until the fish easily flakes with a fork.
  8. Optional: While salmon is baking, crush Pink Peppercorns in a mortar and pestle or with the bottom of a frying pan. After the salmon has baked for about 10 minutes, sprinkle crushed Pink Peppercorns on top (this gives it a citrusy, peppery burst of flavour). Return to the oven for another 5-10 minutes until fully cooked.
  9. For extra caramelization: Place on broil for the final 2-3 minutes of baking. Be careful not to burn or overcook it.
  10. Remove from the oven and serve atop broccolini for a perfectly flavoured and easy dish! Enjoy!
